When Vicky and Karl Stadtler bought Ashbary Coffee House in 2006, they weren’t just changing careers — they were redefining their lives.

“We took a big leap of faith and decided to just do it,” Vicky said.

Located at 8695 Archer Ave., the coffeehouse officially opened its doors on Aug. 2, 2006, and has since become a staple in the Willow Springs community. Known for its warm atmosphere, local art, live music and loyal following, Ashbary Coffee House is celebrating its 19th year serving coffee, conversation and creativity.

The Stadtlers, of La Grange, brought their diverse backgrounds into the business.

Karl, a former sheet metal contractor, and Vicky, a Saint Xavier University fine arts and education major who worked in numerous Chicago galleries and taught junior high, decided it was time for something new.

“This is a nice community with a lot of young people — especially artists and musicians,” Vicky said.

Ashbary Coffee House has become a haven for more than just coffee lovers. Senior citizens often gather in the mornings to chat, while younger patrons stop by to study, create and connect.

Karl said the people are what keep him coming back every day.

“I love being here,” he said. “I love the people. I don’t want to retire, because what would I do?”

The couple is married for 52 years after meeting on New Year’s Eve in 1973. They have one daughter, Kate, and two grandchildren.

Beyond its signature drinks — including manager Lily Wilmington’s recommendation, the Caramel Nut Coffee, and Vicky’s personal favorite, the Harvest Moon, a caramel-and-vanilla blend she calls “fall in a cup” — the menu features house-made soups, paninis, wraps with fun names like the Fuggettaboutit, Roger Rabit and Good Fellas, along with Vicky’s home-baked cookies and breads.

But that’s not all, because Ashbary also features gluten-free options like banana chocolate chip bread. Seasonal favorites include Vicky’s Greek Soup and Vegan Chili, staples during fall and winter seasons.

“We have customers coming in asking for the soup now,” Karl said. “It’s still the end of summer, but it will be available soon.”

Live entertainment is a cornerstone of Ashbary Coffee House.

Open mic night every Wednesday from 8 p.m. to midnight draws local talent, with sign-ups starting at 7 p.m. Friday and Saturday nights feature live bands, and on Tuesdays, a tarot card reader entertains from 7 p.m. to 10 p.m. The shop also hosts private parties on Sundays and frequently holds fundraisers to support community causes.

“Our employees are mostly local and all know said. each other well,” Vicky said. “They always look out for each other.”

The coffeehouse is open daily from 10 a.m. to 10 p.m., closing at 8 p.m. on Sundays. And don’t expect the Stadtlers to slow down anytime soon.

“We’ll be here forever,” Vicky said. “It’s our second home.”

  1. I’ve been visiting since I was a teen in 2006 and now bring my kids! Wonderful establishment with an at home feel that should definitely be enjoyed by anyone in the area!
