Prime Tacos, 5836 S. Harlem Avenue, Summit, will hold its official grand opening in May to celebrate Cinco de Mayo. They will celebrate with free tacos, bounce houses, and live entertainment for the community.

Anthony Solis and his brother Eric Cardenas opened the brick-and-mortar location in December after five years building a devoted following with their food truck, known for award-winning tacos and viral Hot Cheeto-coated dishes.

The journey started in a garage. During the pandemic in 2020, Solis and Cardenas began cooking their mother’s recipes and invented the Hot Cheeto burger. They worked festivals and special events, gained a following online, and eventually saved enough to buy a food truck. After years grinding it out at events across the city, they finally opened their first permanent restaurant.

But the Hot Cheeto items are what set them apart. The Hot Cheeto Birria Balls — nacho cheese, fresh rice, Mexican cheese, and birria coated in Hot Cheetos and fried — went viral on TikTok and rank among their best sellers. Customers can coat burritos, burgers, tortas, and wings in Hot Cheetos for a spicy crunch.

“It’s not been easy, but we learned from our mistakes and got better every day,” Solis said.

Their arrachera tacos won Best Tacos at Lakeview’s 2025 Taco Fest. The menu also features grilled chicken tacos, chicken al pastor, and ribeye tacos. Appetizers include elote, chips and salsa, and loaded fries.

The restaurant occupies a former Pizza Hut location in Summit.

“We’re excited to welcome the community and celebrate this milestone,” Solis said of the grand opening.
